It’s Official!


Hey Fabulous Readers!

I have spent the past 5 months reading and studying.

I spent the entire weekend preparing and taking my exam.

It took me nearly ten hours to answer 356 multiple choice questions and 4 different essay questions (including a case study)!

All to be able to say:

I am officially an ISSA Nutrition Specialist!!! Woo hoo!

I have been studying nutrition for a long time and seem to have a passion and knack for it (I am the same with geology, go figure!).  It’s something that I wasn’t taught, but that makes sense to me. I have seen first hand the effects of healthy eating and I want to share that with anyone who is ready to change!

So, now that I don’t have to study for my exam any more (woohoo!), I decided to take a trip to the library and here is what I cam home with:

The Kind Diet by Alicia Silverstone

 I am already about half way through this book and I must say, I really like it. She is very down to earth and uses a ton of credible resources to back up her claims. She is a little too extreme for me (I do love my chicken) but what she says about dairy and grains is right on! Some of her recipes are tad exotic for me, but it gave me a lot of inspiration!

Eat-Clean Diet Stripped by Tosca Reno

 I finished this one in about 20 minutes. It is a great book that is right on and perfect for people who are new to eating clean. Tosca Reno is fantastic and I look forward to reading the other one of hers that I brought home….

Your Best Body Now by Tosca Reno

I also got some inspiration thumbing through this little beauty….

Body Sculpting With Kettlebells for Women

 I love the idea of going vegan because of the plant based nature of this lifestyle, but I just love my chicken and egg whites too much to part with them. However, I do looove to use vegan recipes, so I picked up….

The Vegan Table by Colleen Patrick-Goudreau

So, needless to say, it will be a while before I have more books to pick up, especially since I will be starting back @ PSU in the Fall!! So I am enjoying my free reading time as much as possible!

Exercise of the Week


I looove working out. It’s as simple as that. I love being intense and focused. Circuit training is one of my favorite ways to do that. 4 exercises + 20  minutes at a grueling pace= Kim’s happy place. So, I decided that I wanted to share some of my favorite circuit exercises with you!

Here’s one of my more recent faves:

The Lunge and Lift

Works: Glutes, legs, shoulders and if you draw in, the core.

Equipment: 1 sliding disk (or paper plate), 1 small kettlebell or dumbbell

The Move: Start with your right foot on top of the disk, feet side by side, kettlebell in the left hand.

Slowly slide your right leg back until you drop into a deep lung with your back leg nice and straight, front knee safely behind your front toes. As you push back, raise your right arm to shoulder height.

As you contract your glutes to slide your right leg back, slowly lower your arm. Repeat 12 times on each side.

This works the whole body by increasing heart rate which enables you to burn more calories rather than working on muscle group at a time. Brilliant!!!
