Breakfast on the Go!

I looove breakfast! When I wake up, that’s the first thing that’s on my mind. Should I have oatmeal? Grape Nuts? Toast w/ almond butter or peanut butter? Egg whites? Smoothie….The possibilities are endless!! This morning, my stomach was growling super loud!! I decided it was a protein morning- only problem was, I only had ten minutes to make the magic happen. And here’s what came out:

Open Faced Egg White Scramble Sandwich


1 slice (or 2 if you like a little less chaos on your plate!) of Ezekial Bread

1/2 tomato, sliced

1 T reduced fat cream cheese

1 T avocado, sliced

1/4 c. spinach

1/4 c. egg whites (or 2 whites from 2 Large eggs)

1 T. feta cheese (sliced pepperjack would be quite heavenly too!)

Fresh ground pepper to taste


Pop the bread in the toaster. Cook eggs whites in small skillet over medium heat. Meanwhile, slice tomato and avocado. Spread cream cheese on bread and add your toppings. Place cooked egg whites on top of everything and chomp away!!
