Muddy Buddys- Puffin Style!

Muddy Buddys are delicious! If you have never experienced the indulgent delights of chocolate and powdered sugar covered goodness, then you are missing out!! In a quest to find a somewhat healthier alternative, we decided to head this direction which produced some pretty magical results:

Muddy Buddy Puffins: Not these “Muddy Buddies”, but the tasty treats!

9 C. Peanut Butter (or whichever kind you prefer)

2 T. butter (or Smart Balance/Earth Balance)

1/2 c. almond butter (or peanut butter)

1/4 c. cocoa powder

1 T. vanilla

3/4 c. confectioners sugar

In saucepan, heat almond butter, butter and vanilla until smooth. Meanwhile, combine cocoa powder and powdered sugar together in small bowl. Pour liquid mixture over puffins and stir to coat. Add sugar/cocoa mix and stir to coat. Let absorb about 5 minutes- eat and enjoy!!!

(We did some small calculations for calories and it’s about 320/cup- not too shabby!!)
